Fabulous Food Friday

Grandma Swanson's Cottage Cheese Pancakes
I remember my grandma making these for us when we would visit them in Tacoma, WA. We would wake up to the smell of bacon, come down stairs and she would be making these "hotcakes" as she called them. One summer when my brother and I were staying with them I asked her for a few of my favorite recipes. I'm so glad I did...They are so yummy, I hope you like them too.

In a blender mix the following:

1 cup cottage cheese
6 large eggs
a pinch of salt
2/3 cup flour
1 tablespoon oil

Pour batter on a hot, greased grill or pan. Turn after you notice the pancakes start to look less wet on top. Serve with warm maple syrup.

I made something similar to these on sunday and loved them. I can not eat flour on my diet, so I substituted steel cut oats and added a dash of cinnamon and vanilla...they were wonderful and my new favorite diet breakfast!!!

My ratio was 4 egg whites, 1/2 cup c.c. and 1/2 cup oats (I added a bit of water to get the consistency I wanted)
